Jim and Annette White met thru Marriott Hotels back in 1987. Annette was the Director of Catering and Jim was the Executive Chef, a Culinary Institute of America graduate. Meanwhile, Brian Pierce an aspiring young chef fresh out of Stout University joined the team at the Albuquerque Marriott. He began a very successful career as a chef then worked as an Executive Chef at several well known Albuquerque restaurants. Jim and Annette got married in 1989 and immediately got transferred to Detroit, Michigan. They eventually moved back to Albuquerque and opened up their first restaurant. Time flew by and after years of owning their own restaurants Jim, Annette, and Brian got back together again at Humphrey’s Cafe in Nob Hill NM. Brian became the General Manager and ran a tight ship so they could have a life and enjoy their baby son, Codie. Time again moved on and Brian headed back to Minnesota to spearhead the career of his world famous artist brother. At the same time, Jim and Annette sold Humphrey’s Cafe and took over a 300 year old Adobe restaurant in Corrales, NM, Chef Jim White’s Casa Vieja. During this time, they got involved with Corrales Farmers Market and sold breakfast burritos. It became so popular they could hardly keep up to the demand. Chef Jim also worked with the news stations and filmed ” The Kitchen Minute”, he wrote food articles for the newspaper and had a radio show to talk about food. They all kept in touch over the years while their careers took different shapes. Now let’s fast forward to 2011. Jim and Annette’s son Codie joined the Air Force and we headed to Page, Arizona. Brian remains in Minnesota and was setting the world on fire with some major companies selling his brothers art work. He also enjoyed time with his mom and dad and new found love rescuing pit bulls. One thing lead to another and Jim and Annette moved to New Braunfels to be closer to their son and his beautiful wife Whitney. Now comes the quirky part. While looking for a job in Texas, Brian called and said stop looking for a job and start looking for a location to open up a restaurant. Jim looked in Seguin, San Marcos, and finally found the one in New Braunfels! With the help of their daughter in-law the restaurant got named Underground Pizza. In the current chapter of the book they are all happy here and look forward to a long stay in Texas until they decide to hang up their hats and wander off into the New Braunfels sunset!
